World Croquette Day pays homage to the traditional snack

Whether made of chicken, ham, spinach or ro­cafort cheese with al­monds, cro­quettes are ver­sa­tile. Al­most every­one likes the stuffed bread­crumb rolls, and today is the day to cel­e­brate the tra­di­tional, much loved snack. Jan­u­ary 16 is world cro­quette day and it is a good time for cro­quettes. Once the pre­serve of grand­moth­ers in fam­ily kitchens, cro­quettes of every kind imag­in­able are to be found even in the fan­ci­est restau­rants. Ri­card Fusté, owner of the Pepa Cro­queta shop in Barcelona, says the se­cret to a good cro­quette is that they be “crunchy but thin”.
